Nestled in the Herefordshire rolling hills on the outskirts of the town of Ledbury is The Evolution Winery. In 1276 the Bishop of Hereford recorded in his 'Red Book' the planting of vines on these south facing slopes and now The Evolution Winery has reintroduced them to the area - naming their range of wines after the historic year. Visitors can book a guided tour of the vineyard and winery where the tasting is paired with local cheeses. There's also the option of a self-guided tour.
